Get ready for Cinco de Mayo by whipping up some easy margarita cupcakes


A margarita in cupcake form is perfect for Cinco de Mayo.

This easy recipe uses boxed cake mix, which simplifies the process, but don’t be afraid to swap that for homemade white cake if you’d prefer.

You will need:

Cupcakes
1 box white cake mix
3 large eggs
½ cup vegetable oil
1/3 cup lime juice
1/3 cup tequila
1 tablespoon lime zest
1/3 cup buttermilk

Frosting
8 ounces cream cheese
½ cup unsalted butter
2 cups powdered sugar
2 tablespoons lime juice
1 tablespoon tequila
½ tablespoon lime zest
Green food coloring

Brush your baked cupcakes with tequila.

Once they’re frosted, rim them with sanding sugar on the outer edge of the frosting to complete the margarita effect.
