You can get bowls at Fusian -- but only 1 Dayton-area location has them

Fusian, the fast-growing sushi-focused chain founded by three Oakwood natives, introduced a new menu concept aimed in part to diners who don't like sushi at its third Dayton-area location at the Mall at Fairfield Commons.

The new Beavercreek restaurant that opened its doors on May 2 is the first Dayton-area location — and the fourth overall in the 12-store chain — to offer “Inspired Bowls” in addition to Fusian’s traditional build-your-own sushi roll menu. The bowls’ ingredients and flavors are signed “to appeal to sushi eaters and non-sushi eaters alike,” Fusian’s founders said in a release.

The Inspired Bowls — which share some similarities to Bibibop’s Korean bowls, but use Japanese-inspired ingredients — will be exclusive to the new Beavercreek restaurant in this region — but not for long.

“We hope to roll out Inspired Bowls at our other Dayton-area locations over the next 12 months,” Jake Bluvstein, Fusian’s marketing director, told this news outlet.

Here’s how Fusian describes the new Inspired Bowl concept’s four offerings:

Highland bowl: "hearty and balanced" with a 24-hour brined, house-roasted chicken breast and crisp veggies on a base of subtly sweet white rice. With white rice, roasted chicken, cucumber, roasted Portobello mushroom, sweet onion, sweet bell pepper, sesame soy dressing, spicy mayo, and sesame seeds.

Kaleo bowl: "fresh, crisp and bright," with fresh pineapple, avocado and yuzu-tossed wild-caught tuna atop a bed of citrus-dressed kale. Citrus-dressed kale, tuna, cucumber, pineapple, shelled edamame, avocado, citrus yuzu dressing, slivered almonds, green onion, and sesame seeds.

Wholey Bowl: "plant-based power," with house-marinated roasted tofu is paired with brown rice and crisp veggies. Brown rice, citrus-dressed kale, roasted tofu, cucumber, sweet onion, sweet bell pepper, carrot, avocado, raw beets, miso-ponzu sauce, green onion, and sesame seeds.

Soul Bowl: sustainable Norwegian salmon tossed with our spicy and creamy togarashi dressing. White rice, citrus-dressed kale, salmon, sweet onion, carrot, sweet bell pepper, creamy togarashi dressing, sesame soy dressing, furi flakes, green onion, and sesame seeds.

Fusian operates 12 restaurants in the Dayton, Cincinnati, Columbus, and Toledo areas, including a location on Brown Street near the University of Dayton and in Washington Twp. next to Whole Foods.

Fusian Sushi was launched in Cincinnati in 2010 by Zach and Josh Weprin and Stephan Harman, who attended Oakwood’s Harman Elementary School. The trio had talked as kids of going into business together, Stephan Harman told this news outlet in 2011.

After a relatively deliberate approach to growing the chain in its first four years, the trio has doubled the number of locations in recent years as it expanded into new markets of Columbus and Toledo, and plans call for adding the Cleveland market in 2018.
