The life of music educator George Zimmerman, who died Jan. 1 at the age of 91, will be celebrated Thursday afternoon at 4:30 p.m. in the Sears Recital Hall of the Philips Humanities Center on the University of Dayton campus. The public is invited to attend.

Celebration of Life planned
The University of Dayton will host a Celebration of Life service in memory of George H. Zimmerman, at 4:30 p.m. on Thursday, April 24, in Sears Recital Hall in the Philips Humanities Center.
A reception will follow. The public is invited. Memorial contributions may be made to the University of Dayton or Miami University Departments of Music.
George Zimmerman’s Lemon Mustard Chicken
6 skinned chicken breast halves
1/4 cup margarine
3 tablespoons Dijon mustard
1/2 teaspoon salt
3 tablespoons fresh lemon juice
1 teaspoon tarragon
Preheat over to 375 degrees
Place chicken in shallow baking pan. In a small sauce pan, melt margarine. Stir in mustard, lemon juice, tarragon and salt. Pour over chicken.
Bake chicken for 45 minutes or until cooked through. Spoon sauce from pan over chicken.
George Zimmerman’s Cheese Beer Soup
1/4 cup melted butter
1 1/2 quarts chicken stock
1/2 cup finely chopped celery
1/2 pound cheddar cheese, cubed
1 can beer
1/2 cup flour
1/2 cup finely chopped onion
1/2 cup finely chopped carrots
1 1/2 cups milk
1/2 cup chopped parsley
Add flour to butter and brown. Slowly add stock, stirring constantly with whisk. Cook until slightly thickened. Add vegetables, simmer 20 minutes.
Stir in cheese until melted. Add milk and beer, reduce heat immediately. Add parsley and cook at reduced heat another 5 minutes.
Season to taste with salt and pepper white.
Serve hot, should serve 8.
