Simone Sofian’s Honey Cake
“This is the best honey cake recipe I have ever tasted. It is very moist and dense. This recipe is from my husband’s mother, Freda Feinberg Sofian, who got it from her friend Rickie.”
Preheat oven to 350 degrees F.
Grease a 9x5 inch loaf pan and line the bottom with waxed paper or parchment paper
1/2 cup honey
2/3 cup sugar
1/3 cup vegetable oil
1 1/2 cups all purpose white flour (preferably unbleached)
1 teaspoon baking powder
3/8 teaspoon baking soda
3/8 teaspoon cinnamon
3/8 teaspoon nutmeg
2/3 cup strong coffee
In a mixer or with a hand mixer, beat eggs and sugar together until light in color, 3 to 5 minutes. Add the honey and oil and beat again for another 3 to 5 minutes.
In another bowl mix together the flour, baking powder, baking soda and spices.
Alternate the dry ingredients which have been mixed together with the coffee to the egg/honey mixture. Continue to beat until all the ingredients are thoroughly incorporated.
Pour the batter into the prepared pan. Bake 60 to 70 minutes, until a toothpick inserted comes out clean. Let rest in pans for 20 minutes and unmold to cool completely.
